This tasty and nutritious salad features fresh, crunchy kale, spicy arugula, and lemony sorrel. High in vitamins and minerals, this recipe is sure to leave you feeling full, refreshed, and ready to take on the World!
Ingredients:
- 1 pound Kale (curly and sea)
- 1 cup Arugula
- 2 cups Sorrel
- 1 can chickpeas (sub. beans or veggie burger)
- 1 bell pepper
- 1 large carrot
- 1-2 cups tomatoes
- 1 small onion (about 1/3 cup)
- 2 cloves garlic
- 1/2 lemon
- 2 tbsp hummus
- olive oil
- salt
- pepper
- crushed red pepper
Instructions:
- Rinse and chop kale, arugula, and sorrel; add to bowl
- Chop bell pepper, tomatoes, and onion; add to bowl
- grate carrot with cheese grater into bowl
- crush and chop garlic; add to bowl
- rinse chickpeas and add to bowl
- squeeze lemon into bowl
- add hummus to bowl
- add olive oil, salt, pepper, red pepper to taste
- toss bowl to thoroughly mix
