Pesto is a delicious addition to any pasta, pizza, salad, or other dish, and is also a great way to preserve greens longer. This pesto can be made with any number of flavorful greens, so get creative and use what’s available! Also check out our post on foraging wild spring greens for pesto!

Ingredients:

  • flavorful greens (basil, arugula, garlic mustard, onion grass, cress, etc.)
  • oil (olive, walnut, acorn, etc.)
  • garlic
  • nuts (walnuts, hazelnuts, pine nuts, etc.)
  • parmesan cheese (or nutritional yeast, optional)
  • salt
  • pepper

Instructions:

  • wash greens and place in a blender or food processor
  • add about 1/4 cup oil per 1 cup greens
  • add about 1/4 nuts per 1 cup greens
  • add cheese (or nutritional yeast) to taste
  • add garlic, salt, and pepper to taste
  • pulse the blender until finely pureed, adding more oil if needed
  • scoop out pesto into an airtight jar and store in the refrigerator for up to two weeks
Finished pesto in a container to be stored in the refrigerator for later use.
